NV Champagne Guiborat "Prisme" Grand Cru , Champagne, France $78.99
Almost 3/4 of the production,5 of the 8 hectares, is sold to Laurent-Perrier, the domaine keeps only
the best parcels to make their champagne – most of which are grand cru vineyards from the deep
chalk of Cramant and Chouilly, as well as a vineyard in the Marne near Epernay where they have
Pinot Meunier.

100% Grand Cru Chardonnay produced from 4 parcels in the Cotes des Blancs. 
Guiborat's Prism is all about chalk. A rich, racy and layered Chardonnay with bredth and length, and a myriad of complex aromas and flavors for the true Cote des Blanc lover.


NV Champagne Guiborat "Tethys" Grand Cru , Champagne, France $65.99
Practicing organic. 100% Chardonnay. Sourced from 4 parcels in Grand Cru villages in the Cote de Blancs.  Sourced from chalk-heavy Grand Cru sites (in Cramant, Choilly and Oiry) and matured in chalk cellars, this, like all Guiborat Champagnes, is for those who love their minerality. For this cuvee alone, a portion of the blend sees malolactic.
Tethys – named after the Greek goddess of the sea and the name of the ancient ocean which previously covered Champagne- emphasizes the pleasure and fruit of Chardonnay.

Pinot Meunier

Based on the 2016 vintage, zero dosage. One wine, 3 different labels. Tiny operation, fifth generation, Richard Fouquet and his wife Karine farm their 20 acres, 12 are under contract to Laurent Perrier. Red berries and cream on the nose with more orchard fruit and brioche on the palate.

The Champagne Hervé Brisson is a family wine estate of 3,05 ha of chardonnay, located in the Cote des Blancs.

Champagne Hervé Brisson Les Aulnes Extra Brut is a delightful embodiment of the Champagne region’s finesse and sophistication. With its pale gold hue, it presents a lively bouquet of green apples, citrus zest, and hints of freshly baked bread, enticing the senses. The first sip reveals a crisp and invigorating palate, where flavors of green apples and ripe pears harmonize with a subtle undercurrent of minerality, characteristic of the Champagne terroir. The finish is clean and lasting, leaving a lasting impression of orchard fruits and a whisper of brioche.


NV Vincent Couche "Elegance" Brut Champgne, France $51.99
 
Region: Aube < Champagne < France
Grapes: 80% Pinot Noir, 20% Chardonnay
Vincent Couche has farmed his 14ha of vines organically since the start in 1995, and biodynamically since 2008 -- this is extremely rare in Champagne, where only 2% of the production is even organic.  And his wines are actually certified biodynamic, not just the farming practices, so he had to meet a much higher standard - he’s the only one who has achieved this level of certification in Champagne, which is pretty huge.  Vincent is so concerned about biodiversity that he purchased land around his vineyard to keep it wild, and also introduced 200 chickens in vineyard to fertilize the soil. 

Vibrant and high-acid, yet rich and round on the palate, this biodynamic Champagne (the first to be certified as a Biodynamic Wine, not just biodynamic farming - much higher standards!) has something for everyone.  Champagne drinkers will love the crunchy pear, raspberry, and golden delicious apple fruit, the kiss of brioche (from all the time on the lees), and the long, minerally finish.


NV Vincent Couche "Desir" Rose Champgne, France $59.99
This excellent grower champagne producer is from the Aube, the southern extension to the Champagne region, closer to Chablis than Reims. Here Pinot Noir predominates and it can achieve more ripeness than further north.  Ripe, red Burgundy, Pinot Noir nose.  The use of oak aging is clearly marked on the nose, adding a complexity and gloss to the fresh fruit.  Really distinctive and successful - because of the wood character, far from typical rose champagne, but this is really quite compelling.
