The Wines
NV Parigot Monochrome Cremant De Bourgogne Rose Brut, Burgundy, France $36.99
Parigot Monochrome Crémant de Bourgogne Rosé Brut is a vibrant and refined sparkling wine made from 100% Pinot Noir. It features a delicate salmon color, and its brief maceration highlights the pure expression of the fruit, showcasing the house's distinctive style. The wine offers aromas of strawberry, rosehip, and a touch of wheat toast with subtle smokiness. On the palate, it is fruity and frothy with a tang of lemon and richer dried fruit notes, providing a dry, resonant finish. Aged for 36 months with a dosage of 7g/L, Monochrome exhibits good structure, length, and liveliness, with a slightly coarse mousse that adds to its charm.
2023 Vignoble Du Reveur Au Fil De L`Ill Blanc, Alsace, France $25.99
This vintage is a bit like a stroll along the Ill on a misty morning: mysterious, invigorating, and full of surprises. The Ill, the river that runs through Alsace from end to end, is the very origin of the region's name (ELL SASS: the bed of the Ill river). A blend of Pinot Blanc, Pinot Gris, Riesling, and Muscat, it combines roundness and freshness with notes of ripe fruit, white flowers, and a saline touch reminiscent of the minerality of Alsatian terroirs. Created by Mathieu Deiss, this natural wine plays the card of authenticity and precision. In short, it's Alsace, but in daydream mode.
Vignoble du Reveur (The Dreamer’s Vineyard) is a domaine founded by the immensely talented Mathieu Deiss (of Domaine Marcel Deiss) and his partner Emmanuelle Milan. While working with his father Jean Michel Deiss at the family domaine, Mathieu received an inheritance of vines from his uncle in the commune of Bennwihr, just outside the valley of Kaysersberg in Alsace. While continuing to work at Domaine Marcel Deiss, Mathieu and Emmanuelle saw the opportunity to use these 7 ha of vines as a home to experiment, push boundaries, and explore a new path for biodynamic viticulture and their winemaking dreams.
2024 Romain Guiberteau 'Chai de la Dive' Saumur Rose, Loire, France $22.99
Variety: Cabernet Franc
Vinification: Pressed with whole clusters, settled for 24 hours and racked, 21-day ambient yeast fermentation in stainless steel tanks between 19°C and 21°C, blocked malolactic conversion (blocked by SO2 and low temperature), aged for 6 months in stainless steel tanks, tangential flow filtration, 20-30 ppm SO2 added after pressing and adjusted after fermentation and before bottling if needed (60 ppm total, 20 ppm free), bottled April 2025.

Variety: 68% Négrette, 24% Syrah, 8% Cabernet Franc

Vine Age: Planted in the early 2000s
Terroir: Clay-limestone with alluvial gravels and silt. Located on the third terrace in Tarn at 220-meters elevation.
Viticulture: Organic (AB, 2011), biodynamic practices, cover crops, minimal copper with the use of plants and essential oils.
Vinification: Varieties vinified and aged separately, de-stemmed, 3-4-week ambient yeast fermentation and maceration, aged for 18-22 months in concrete tanks, no fining, no filtration.
2023 Lignier-Michelot Cuvee 823 Coteaux Bourguignons Rouge, Burgundy, France $39.99
Lignier‑Michelot’s Coteaux Bourguignons Rouge Cuvée 822 draws from a selection of lighter-clay parcels near Morey-Saint-Denis. Crafted by Vincent and Olivier Lignier, this 2022 is vinified with whole-cluster fermentation and indigenous yeasts.
Aged gently in neutral Burgundian barrels, it offers direct, red-cherry fruit, subtle spice, and fresh structure. A value-driven expression that bridges village precision and regional charm.
2023 Benjamin Leroux Bourgogne Rouge, Burgundy, France $57.99
This is from sites across the Côte de Beaune: Monthélie Premier Cru along with Bourgogne-level vineyards in Volnay, Pommard and Meursault. It is a lovely, vivid expression of the vintage, full of lifted, pure red fruit. The palate has just the right amount of chunky, sapid tannins. The wine finishes its ageing in foudres to retain its freshness. It was the first to be bottled at the end of August 2024.
